The healing colors of fruit and veg
We all know that it’s recommended that we eat
five portions of fresh fruit and vegetables a day, but
did you know that the color of the fruit and vegetables
you eat can also affect your health? “Recent research
[5] has discovered that the darker the fruit or vegetable
you eat, the higher its anti-cancer properties are likely
to be,” explains Ian Marber, one of the UK’s leading
nutritionists.
New research at Glasgow University that compared
[10] the antioxidant levels in red and white grapes concluded
that the rosy-hued variety contain a far higher level of
beneficial chemicals than their white counterparts. The
reason for this is simple. Darker fruits and vegetables
develop their color to protect themselves from the
[15] damaging effect of the UV rays of the sun. As a result,
darker-skinned fruits and vegetables contain more
antioxidants — the healthy chemicals that are thought
to protect us from heart disease and cancer.
When we eat these fruits and vegetables, our
[20] bodies absorb the antioxidants that help protect us from
the damaging free-radical chemicals caused by UV
exposure, pollution, stress and general daily damage.
The best fruits include plums and red apples,
blackberries and blueberries. Darker vegetables
[25] include eggplants, carrots, kidney beans, tomatoes
and peppers. But it must be pointed out that all fruits —
including white grapes and green apples — have a high
level of antioxidants and offer a good source of fiber.
To gain the full benefit from these antioxidant-rich
[30] foods, avoid peeling apples and plums, as it is this
part that contains the richest source of antioxidants,
and, wherever possible, try to eat them raw or very lightly
cooked.
